Some Healthy Recipes

Haystack Cookies

Mix:
2/3 cup Peanut Butter
2/3 cup honey
2/3 cup water, cold
1 tsp. salt
Add:
2/3 cup flour
2/3 cup oats, quick
4 cups coconut, flaked
1 cup nuts, chopped
2 cups dates, chopped

Mix together. Using a tablespoon, form balls, pressing each ball together lightly. Place each ball on to sprayed cookie sheet. Bake at 350* for 15-20 minutes or until golden brown.
Makes 60 cookies

This is a great, healthy cookie recipe that I got from a cooking class that I went to. Each person that attended the classes got a "Diet & Stress Simple Solutions" cookbook/workbook. Wow - I just looked it up and I am SO glad I went to this class - cause it cost quite a bit to buy with the kit. Maybe they sell just the book for cheaper though. It is really more like a workbook with a few recipes added for each chapter. If I come across more recipes that we like I will share them with you all. Actually I do like another recipe of theirs.


Hearty Hummus

Place in blender;
1 -15 oz. Can garbanzo beans, drained, or 2 cups cooked garbanzos
1/4 cup lemon juice
1/3 cup sesame tahini
2 tsp. garlic powder OR 2 cloves, fresh garlic
1/2 tsp. salt
1/2 cup water

Blend ALL ingredients thoroughly. IF you are using a conventional blender and not a stronger machine, such as a Bosch or Vita-Mix, blend recipe one-half at a time. Stop blender. Stir with a spatula. Continue to blend until creamy. Chill.
Makes 3 cups.
