Flaxseed Bars OR Happy Bars
1 C. peanut butter
1 tsp. salt
1 1/4 C honey
1 T. vanilla
4 C. flax seeds
Blend 1 C. seeds at a time, to a fine consistency. Mix all items gradually, adding the ground seeds. Place onto 11x15 sprayed cookie sheet. Roll smooth or use hands to press. Score into 1 1/2 inch pieces. Bake at 300 for 20 minutes. Keep in fridge., can freeze.
This is one of the recipes that I got from the health seminar that I went to last week. I was very surprised at how good these were. And they are very good for you as well. Flax seed is good to help lower cholesterol.
Also I need to add this information - if you get flax seeds already ground then you will need like 7 cups. Apparently when you blend up the flax seeds they really expand.
Also if you do not want to make such a large amount of them - you can always cut the recipe in half, just use a smaller pan.

Yum! I want to make these for sure! Thanks so much for posting this! I do have one question--how thick are these bars? Trying to figure out which of my pans I would use. Need to go measure my different options! :)
ReplyDeleteSusan - I have not made these yet but at the seminar - they made them and it seemed like they were pretty thick. I think she actually stuck her hands in to combine all the ingredients in the end. I went to the ABC food store to get some flaxseed but they were out.
